1 pound of your favorite ground sausage
6 large eggs
1 15 oz. jar of your favorite salsa
1/2 bell pepper, chopped
1/4 cup yellow onion, chopped
1 pack of flour or corn tortillas

Crack the eggs into a bowl and mix with a fork or whisk. Set up a frying pan on your RV stove top or over the camp fire. When the pan is hot, add your sausage. When the sausage is halfway done cooking and still a little pink in the middle of pieces, toss in the onion and bell pepper. Let the mixture cook until the sausage is brown all the way through and the vegetables are soft. Pour in the eggs and stir as they cook to create a homogenous mixture. When the egg is completely set and cooked, remove the mixture from the pan and clean it. Heat your tortillas in the pan until soft, then fill and top with salsa. Shredded cheese and sour cream can also be added for extra flavor and protein.

Pineapple Upside Down Cake

 1 9-oz. box of yellow cake mix, preferably a brand that only requires water
1 16 oz of crushed pineapple in juice
1/4 cup brown sugar
1/2 stick of butter

Cast iron dutch oven or other lidded pan for the campfire

 Melt the butter in the pan, then dump in the brown sugar and stir constantly until it is completely melted. Empty the can of pineapple and juice into the pan as well. Mix up cake mix per the instructions on the box. Pour the mixture in over the pineapple and sugar, then cover and set the pan over a raked bed of coals. Add a layer of coals to the top for even heat. Check it after 30 minutes. The cake is fully cooked when a toothpick comes out clean.

We’ve all heard that old saying: “An ounce of prevention is worth a pound of cure.” That is never more true than when you’re dealing with the clearance height of your RV.
